BBQ Veggies with Homefries
Ingredients
- 1 head of broccoli (cut into florets)
- 1 head of cauliflower (cut into florets)
- 3-4 medium carrots (cut into 1 inch pieces)
- 2 medium onions (cut into large wedges)
- 2 red bell peppers (cut into large chunks)
- 1 yellow squash (sliced)
- 2-3 lbs small golden and/or red potatoes (cut into 1 inch pieces)
- Sweet BBQ sauce
- Olive oil
- Red pepper flakes
- Italian seasoning
- Salt & pepper
Steps
- Prep vegetables according to the ingredients list above and preheat your oven to 400°F (note: feel free to add or remove any of the veggies according to your liking).
- Boil your potatoes until barely fork-tender.
- Lay potatoes on a oiled, tinfoil-lined baking sheet and cover liberally with olive oil, italian seasoning, red pepper flakes, salt, and pepper.
- Bake potatoes for 30-45 minutes, to your liking.
- In a wok or large pot, add enough oil to cover the bottom and start by cooking harder vegetables like carrots and cauliflower over medium heat.
- After a few minutes, lay the rest of your veggies into your wok/pot.
- Cook vegetables for ~20 minutes over medium heat.
- Once vegetables and homefries are plated, pour BBQ sauce over vegetables and serve. (suggested note: vegetables may also by served with rice and/or corn on the cob)
