White Bean Salad

Ingredients

  • 2 cans white beans (drained & rinsed)
  • 1 can diced tomatoes (drained)
  • 1 cup quinoa
  • 2 cloves garlic (minced)
  • 1/2 cup fresh parsley (chopped)
  • 1 cup Pickled red onion (I make my own)
  • Red wine vinegar salad dressing
  • Italian seasoning
  • Salt & pepper


Steps

  1. Prep ingredients according to the ingredients list above and cook quinoa.
  2. In a large bowl, mix ingredients and add dressing and seasoning to taste. Yeah, it’s that easy.
