White Bean Salad
Ingredients
- 2 cans white beans (drained & rinsed)
- 1 can diced tomatoes (drained)
- 1 cup quinoa
- 2 cloves garlic (minced)
- 1/2 cup fresh parsley (chopped)
- 1 cup Pickled red onion (I make my own)
- Red wine vinegar salad dressing
- Italian seasoning
- Salt & pepper
Steps
- Prep ingredients according to the ingredients list above and cook quinoa.
- In a large bowl, mix ingredients and add dressing and seasoning to taste. Yeah, it’s that easy.
