Veggie Fajitas
Ingredients
- Corn or flour tortillas
- 2 green bell peppers (sliced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 medium onion (sliced)
- 1 can black beans (rinsed & drained)
- 1 cup brown rice
- Guacamole (I use pre-bought)
- Pickled red onion/red cabbage (I make my own)
- 2 tsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper 1/2 tsp cayenne
- Lime or lime juice
Steps
- Prep vegetables according to the ingredients list above.
- Cook raw vegetables over medium high heat for 10-15 minutes, stirring in the seasonings listed above.
- While the vegetables are cooking, cook brown rice in a pot or rice cooker and heat up the black beans.
- Once ready to plate, heat up tortillas in the microwave.
- To serve, add rice, beans, and vegetables to the tortillas and top with guac, pickled onion/cabbage, and lime juice. (note: you may also top with cilantro)
