Veggie Fajitas

Ingredients

  • Corn or flour tortillas
  • 2 green bell peppers (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 medium onion (sliced)
  • 1 can black beans (rinsed & drained)
  • 1 cup brown rice
  • Guacamole (I use pre-bought)
  • Pickled red onion/red cabbage (I make my own)
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper 1/2 tsp cayenne
  • Lime or lime juice


Steps

  1. Prep vegetables according to the ingredients list above.
  2. Cook raw vegetables over medium high heat for 10-15 minutes, stirring in the seasonings listed above.
  3. While the vegetables are cooking, cook brown rice in a pot or rice cooker and heat up the black beans.
  4. Once ready to plate, heat up tortillas in the microwave.
  5. To serve, add rice, beans, and vegetables to the tortillas and top with guac, pickled onion/cabbage, and lime juice. (note: you may also top with cilantro)
