Instant Pot Vegetable Soup

Ingredients

  • 2 tomatoes (diced)
  • 2 medium red bell peppers (diced) 2 onions (diced)
  • 3-4 carrots (sliced into equally-sized pieces)
  • 1 large handful of green beans (cut into 1 inch pieces)
  • 3 large golden potatoes (diced)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 1/2 cup white wine
  • Red pepper flakes
  • Salt
  • Pepper


Steps

  1. Prepare vegetables according to the ingredients list above.
  2. Dump all of the prepared vegetables into the Instant Pot (not the frozen vegetables) and fill with water to the max fill line.
  3. Set Instant Pot to “manual cook” on high for 15 minutes.
  4. Once finished, manually release pressure.
  5. Add in wine, frozen peas, and corn, and season to taste with salt, pepper, and red pepper flakes. Serve hot.
