Instant Pot Vegetable Soup
Ingredients
- 2 tomatoes (diced)
- 2 medium red bell peppers (diced) 2 onions (diced)
- 3-4 carrots (sliced into equally-sized pieces)
- 1 large handful of green beans (cut into 1 inch pieces)
- 3 large golden potatoes (diced)
- 1 cup frozen corn
- 1 cup frozen peas
- 1 1/2 cup white wine
- Red pepper flakes
- Salt
- Pepper
Steps
- Prepare vegetables according to the ingredients list above.
- Dump all of the prepared vegetables into the Instant Pot (not the frozen vegetables) and fill with water to the max fill line.
- Set Instant Pot to “manual cook” on high for 15 minutes.
- Once finished, manually release pressure.
- Add in wine, frozen peas, and corn, and season to taste with salt, pepper, and red pepper flakes. Serve hot.
